I usually dislike that sort of ending too, but by the time I got to it I'd listened to my tape of "Over Sea, Under Stone" so often that I knew quite a lot of it off by heart, so my love was pretty much unshakeable! But you're right, it's so frustrating to see them lose all that. I handwave it with something along the lines of "well, they don't consciously remember, but they are sort of aware of it - they are changed by what happened, but they can't remember the details", which doesn't really make sense and isn't exactly supported by the text. :/
