feeling uninspired in the subject line department

Due to a distressing baking failure, I have a bowl of cut-up cooking apples in my fridge that I need to bake into something soonish. Does anyone have any ideas for what I can do with them? All suggestions gratefully received, especially from anyone who's going to Stitch and Witch tomorrow, on account of I am hosting it and will probably end up feeding you whatever it is I make. :D

Not sure if your apples are sliced or chunked; this recipe calls for slices, but you could probably modify for chunks.

It's really easy if you use frozen flaky pastry, or fresh filo (much lighter and even easier; no rolling) Then just wrap apple, cinnamon, and sultanas, and bake!

Mincemeat! That's a good idea. I've made the apples into apple cake now but I'll remember that for next time.
